I spent a few minutes creating an accessible table example for a friend of mine a few minutes ago. While it doesn't represent all of the possibilities when tables get complex, what I made represents the majority of simple tables you'll use, and shows you the proper code to use to ensure complete accessibility.
Remember, with the amount of great xhtml hooks (read: elements) in there, there are millions of ways to use CSS to change the default appearance. What you'll see in my example is CSS-free, so it's really however your browser of choice wants to show it to you.
